Veggie Lasagna

I got it in my head this morning that I wanted to make Veggie Lasagna, but wanted to try it in the crock instead of the oven. I kinda scoped some recipes and created my own. I have a 6 qt. crock and this filled it almost to the rim:



-1 tbsp olive oil
-1 small-med onion, diced
-2 cloves garlic, minced or pressed
-1 jar of the cheapest most boring tomato sauce I could find (you could used canned, I am just avoiding them)
-1 pkg. No boil lasagna noodles
-1 32oz tub of Ricotta
-2 lg. eggs
-1 1/2 c. shredded Italian blend cheese
-3/4 of a 9oz package of spinach or a bunch of fresh(I'm not crazy about spinach and the whole package seemed like too much, but that's me, lol. My kid will eat the rest in his eggs)
-2 med-lg carrots, shredded
-2 med zucchinis, sliced
-1 med-lg eggplant, peeled and sliced
4 oz of fresh mushrooms, sliced
1 small can of sliced olives (2 oz, I think)
Salt and pepper and assorted herbs (I used rosemary, basil, thyme, parsley, oregano)


In a sauce pan heat the olive oil over med/high heat. When hot, add the diced onion and let caramelize a bit. Toss in the garlic and let it get cook for about another min. Turn off the heat and mix in the tomato sauce and some of the herbs.

In a bowl mix the ricotta, 2 eggs, and 1 cup of the shredded cheese. Into this mixture add the shredded carrots and spinach. Also mix in some of the herbs and salt and pepper.

Put enough of the sauce in the bottom of the crock to just cover it. Layer the noodles on top of that. The eggplant comes next. Then a layer of the cheese mixture. Top that with the zukes and then more noodles. On the second layer I put a layer of sauce over the zukes before the next layer of noodles.

After the final layer of noodles, I placed the mushrooms and the olives, and a final light coat of sauce and the remaining shredded cheese. Turned it on high and let it go for 3 1/2 hours or until my thermometer read 165 (because of the eggs).

I ended up with a super deep lasagna, and we have leftovers, but I think this might be the best lasagna I have ever made. My family made me promise to keep it.
